Let's Make a Healthy Baked Tortilla Quiche!

If you're looking for a breakfast idea that's healthy, quick, and incredibly delicious, you have to try this baked tortilla quiche! It's packed with veggies, protein, and good fats, making it the perfect way to start your day. Here's how to make it step by step.

Ingredients:

  • 1 tortilla (large enough to line your dish)

  • 3 eggs

  • Cottage cheese (adds creaminess and protein)

  • Veggies:

    • Shallots

    • Peppers (any color works!)

    • Kale

  • Turkey sausage (optional, for added protein)

  • Olive oil spray

  • Seasonings of your choice (I used Sriracha seasoning from Trader Joe’s for a kick)



Directions:

1. Prep Your Veggies and Protein:Chop your veggies and caramelize the shallots for a burst of sweetness. I used turkey sausage, but feel free to choose your favorite protein—or skip it for a vegetarian version.

2. Prep Your Dish:Spray a shallow glass baking dish with olive oil to prevent sticking. Place your tortilla in the dish, pressing it to fit the bottom and sides.

3. Whisk the Eggs:Crack three eggs into a bowl and whisk them with a generous dollop of cottage cheese. (Even if you don’t usually buy cottage cheese, trust me—it makes the quiche extra creamy and flavorful!) Season the eggs to your liking.

4. Combine and Pour:Mix the cooked veggies, kale, and sausage into the egg mixture. Pour everything into the tortilla-lined dish.

5. Bake:Bake at 350°F (175°C) for about 20 minutes, or until the quiche is set and slightly golden on top.

6. Garnish and Serve:Once baked, top with sliced avocado for healthy fats, leftover peppers, or any toppings you love. I added a sprinkle of Sriracha seasoning for some extra flair.
