At this point… just call me a pastry chef. 😮💨I wanted a fall dessert but didn’t feel like going to the store, so I opened my pantry, searched Pinterest for a little inspiration, and decided to combine the best of both worlds: an Apple Pie Cake.
Yes, it is exactly what it sounds like.And yes, it is absolutely fall in every bite. 🍎🍏✨
The best part? I completely freestyled it.
Ingredients (Freestyle Edition)
Disclaimer… these measurements are close enough, but not exact. We are baking with vibes only today. 🫠

Pie Crust
• 1 store-bought pie crust (HERE)
Cake Layer
• 1 cup + 3 tablespoons oat & almond flour(I blended oats + almonds to make flour)
• 7 tablespoons unsalted butter
• 1/2 teaspoon vanilla
• 2 eggs
• 1/4 teaspoon salt
• 1/4 cup coconut sugar
Apple Mixture
• Granny Smith + Gala apples
• Cinnamon (as much as your heart says)
• 1/4 cup coconut sugar
• Juice of half a lemon
• A little store-bought jam mixed with water (to brush on top after baking)
Freestyle Directions
This recipe is meant to be fun, cozy, and totally customizable. Here’s how I threw it together:
Add your pie crust to your pie dish or leave it in the tin it comes with. No judgment.
Mix together all the cake ingredients and set the bowl to the side.
Slice your apples, place them in a bowl, and mix in the cinnamon, coconut sugar, and lemon juice.
Layer everything: crust on the bottom, cake mixture on top, and apples arranged however you like.
Bake at 350° for 1 hour.
Warm a spoonful of jam with a splash of water and brush it over the top for that glossy bakery finish.
And that’s it.. my accidental but delicious Apple Pie Cake.Crispy edges, soft cake center, perfectly spiced apples… this is exactly what fall should taste like. 🍂
